BYPASS THE COW Charlie Mitchell has opened my eyes (Apr 18). We should export water, not milk.
Selling water involves the removal of around 1 litre of water for each litre of product. The comparable figure for milk is around 250L of water for each litre.
Bottling water does not degrade our streams, pollute aquifers, emit greenhouse gases or damage the ecology of the land. Cows contribute significantly to all four.
Export markets for water are relatively secure. There are unlikely to be the massive price swings such as those experienced recently by the dairy industry.
We should bypass the cow and export our water directly . G M Mt Pleasant

THE WATER DEBATE The recent revelation that we are allowing others to make a small fortune from our water, is galling to say the least. But it does serve to illustrate a point — one that our marketers so often fail to grasp. Water is water is water. Spray it on pasture and it's worth next to nothing. Bottle it and label it Alpine Spring or Crystal Pure, or some such, and it's "worth" a bundle. That's "added value" we are told. But pretty well all the so-called value added is in the mind of the consumer; which, dare I suggest, is where most so-called added value is to be found. It's hardly rocket science. N M Khandallah
